This traditional Durum wheat semolina spaghetti are extruded through bronze.
Why bronze? Tenuta La Valle knows its trade well: through contact with the bronze, the dough forms small abrasions on its surface that give it a particular porosity, fantastic to take the sauce. You will never get this quality with Teflon dies. That's why some spaghetti are cheaper than other.
