BALARI 2019 Vermentino
SARDINIAN WINE BALARI 2019 11% alcohol content Grape variety: Vermentino Balari is a gorgeous sparkling Vermentino wine; grapes grow at an altitude between three hundred and five hundred meters above sea level, on soils deriving from granite weathering. These grapes, once the harvest has taken place - usually early, around the first decade of September, for a fruit richer in acidity and less of sugar, in order to obtain a more delicate wine, fresher and with a lower alcoholic concentration - are pressed softly, producing a free-run must. This is eventually stored in stainless steel containers at a controlled temperature, then inoculated with selected yeasts that will start the alcoholic fermentation. Once the wine is obtained, the second refermentation is carried out, in an autoclave, the one that will bring the fine bubbles to Balari.
Balari has a pale straw yellow colour with greenish reflections and persistent lines of fine bubbles. The nose reveals very delicate aromas of white flowers, fruits such as green apple and pear and soft nuances of almond husk. In the mouth Balari is a very pleasant and delicate wine, lively with bubbles, with an obviously not very strong body, fresh and savory with the minerality of which the soils where it grows are rich. Balari, besides being a perfect aperitif choice, can be paired with seafood, delicate first courses with vegetable tempura or not too complex fish dishes. When you drink it, suddenly all your memories of your Sardinian holiday will come alive again.
